Our menu focuses on familiar, comfortable food. At the same time, we concentrate on presenting that familiar food in new and unique ways. Also, our menu items are prepared for display in new, innovative styles.

Fun table displays

  • Fresh Fruit Extravaganza: We serve a variety of the freshest melons, berries, grapes and small fruits available; displayed on the table and garnished with melon baskets, carved fruit displays and our signature lingonberry dip. Upgrade your fruit table with chocolate fondue!
  • Crudités Display: A table filled with a spectacular array of the freshest vegetables for your enjoyment. We offer Onion Herb, Ranch, blue cheese and honey curry dips and garnish the tables with carved vegetable bowls and bouquets. Upgrade your crudités with cheese fondue!
  • Gourmet Cheese Board: We guarantee to impress you with our selection of imported and domestic cheeses. We display the cheeses on granite and marble tiles garnished with dried fruits, nuts and assorted crackers. Upgrade your cheese board with a selection of stuffed tortas!
  • Tartar Bar: This is a fun and interesting concept that includes mushroom, tuna, beef and tomato tartars. It is served chilled in an ice bath with toast points, crisp wontons, potato pancakes, plantain tostones and fresh tortilla chips. Upgrade you tartar bar with an iced caviar display!
  • Chips and Dip Bar: This bar includes red tomato salsa, green tomato salsa (in season), corn and black bean salsa, artichoke and spinach dip, spicy guacamole with an assortment of homemade chips for dipping.
  • Seafood Raw Bar: This presentation includes raw oysters, clams, ceviches, accompaniments and other items as our chefs get inspired
  • Charcuterie Display: We specialize in tasty and unique sausages and salamis. We serve a selection of hand crafted items with brined vegetables, olives and jams
  • Dim Sum Presentation: This traditional Asian fare is a selection of shumai, dumplings and other appetizers with dipping sauces.
  • Fui de Mer: A selection of fresh seafood in different preparations. Examples include steamed mussels with mango salsa, grilled jumbo prawns with cilantro chimmichurri, scallops with cider sauce and more. Each presentation utilizes the freshest seasonal ingredients and accoutrements
  • Dips, Sambals and Chutneys: A perfect accompaniment to any of our appetizer selections. The display includes a variety of house made dips (spinach/artichoke, etc.), sambals (spicy pepper purees) and chutneys (sweet and savory salsas). We serve bread and crackers on the side.
  • Olives and Brines: We include many often overlooked items such as caper berries, cornichons, pickled baby corn, etc. Makes a great accent to the antipasto and cheese boards.
  • Antipasto Display: A traditional Italian course including salamis, sausage, cheese, peppers and olives. Served with fresh baked bread from Truckee Sourdough.
  • Lox Display: Cold smoked Norwegian salmon with traditional relishes.

Fresh from the Rotisserie! Our rotisserie trailer will attract a bunch of attention at your next event. The aroma alone will have the guest's mouth watering.

  • Roasted Pork: Loin Bone in pork loin, roasted whole on the rotisserie. Smothered in fresh herbs and served with our own chunky applesauce
  • BBQ Beef Brisket: Slow smoked with mesquite wood and glazed with sweet BBQ sauce
  • Roasted Turkeys: Tender turkeys are injected with Creole butter and rubbed generously with spices before they get skewered. Served with our cranberry chutney
  • Rotisserie Roasted Chickens: Free range chickens are stuffed with cornbread and sausage and rubbed with seasoning before they hit the rotisserie
  • Whole Roasted Pigs: Sweet and tender suckling pigs get injected with marinade and slow roasted until the meat literally falls off the bone. The pork is served with our tangy BBQ sauce or with Kaluha sauce and sweet and sour
